Sausages in Red Wine
- 1 lb sausage
- 12 lb bacon
- 12 lb onion
- 12 teaspoon thyme
- 1 bay leaf
- 1 garlic clove
- 1 teaspoon flour
- 12 pint red wine
- 6 ounces mushrooms
- lard
- 2 teaspoons oil
- salt
- pepper
- Melt lard in an ovenproof casserole dish and fry sausages until brown.
- Remove sausages from casserike and add bacon cubes and onions.
- Fry until brown.
- Sprinkle flour over mixture and pour in red wine.
- Return sausages to casserole and add garlic, bay leaf, thyme, and season to taste.
- Cover and simmer gently for 30 minutes.
- Meanwhile, add oil to a frying pan and brown mushrooms.
- Stir mushrooms into casserole after it has simmered for 30 minutes and cook for a further 20 minutes without lid.
- Serve with mashed potato.
