AMIEs Sweet and Sour Pork

  1. Boil the pork until tender.
  2. Cut into 1" cubes.
  3. Set aside.
  4. Make a batter with flour, eggs and salt.
  5. Dip pork cubes in batter one at a time.
  6. Fry in hot cooking oil until becomes golden brown.
  7. Remove and drain in absorbent paper.
  8. Return pork pieces to frying pan.
  9. Add pineapple chunks, sweet pickles, pepper, carrot, garlic and 1/2 cup broth or water.
  10. Cover and cook for 15 minutes in a low-medium heat.
  11. Prepare sweet and sour sauce, (Combine all ingredients, stirring well until well blended) and pour in saucepan.
  12. Let it boil uncovered for 5 minutes.
  13. Thicken with cornstarch.
  14. Serve hot.
  15. Share and enjoy.
