AMIEs Sweet and Sour Pork
- 1/2 kg lean pork
- 1/2 cup flour
- 2 eggs, slightly beaten
- 1/2 tsp salt
- 1/2 cup broth or water
- 1 cup pineapple chunks
- 6 pieces sweet pickles, sliced
- 1 green or red pepper, diced
- 1 carrot, cut in rounds
- 1 clove garlic, chopped fine
- 1 tbsp cornstarch dispersed in 1 tbsp. water
- 1 sweet & sour sauce
- 1/2 cup sugar
- 1/2 cup water
- 1 tbsp soy sauce
- 1 packages salt
- 1/4 cup vinegar
- Boil the pork until tender.
- Cut into 1" cubes.
- Set aside.
- Make a batter with flour, eggs and salt.
- Dip pork cubes in batter one at a time.
- Fry in hot cooking oil until becomes golden brown.
- Remove and drain in absorbent paper.
- Return pork pieces to frying pan.
- Add pineapple chunks, sweet pickles, pepper, carrot, garlic and 1/2 cup broth or water.
- Cover and cook for 15 minutes in a low-medium heat.
- Prepare sweet and sour sauce, (Combine all ingredients, stirring well until well blended) and pour in saucepan.
- Let it boil uncovered for 5 minutes.
- Thicken with cornstarch.
- Serve hot.
- Share and enjoy.
