Fruity Yogurt Parfait

  1. Place yogurt in a cheesecloth or paper towel lined sieve set over a bowl and drain at room temperature for 1 hour.
  2. In a food processor, process the ricotta and sugar for 1 minute or until very smooth.
  3. Transfer to a medium bowl and stir in the drained yogurt and almond extract.
  4. Spoon one third of the yogurt mixture into each of 6 parfait glasses.
  5. Divide half the fruit among the glasses.
  6. Spoon in another third of the yogurt; top with the remaining fruit.
  7. Spoon the remaining yogurt on top and sprinkle with the toasted almonds.
