All Day Breakfast Salad

  1. Place spinach in a bowl.
  2. Add the Balsamic Dressing and the tomatoes and toss.
  3. Top with the egg, canadian bacon and parsley leaves.
  4. Serve with the pita pieces.
  5. Balsamic Dressing:
  6. 3 tablespoons extra-virgin olive oil
  7. 2 tablespoons balsamic vinegar
  8. 1/2 teaspoon Dijon mustard
  9. Salt and freshly ground black pepper
  10. In a bowl, whisk together the olive oil, vinegar, and mustard.
  11. Season, to taste, with salt and pepper.
