Quick Mozzarella Beef Roll Ups
- 12 lb ground beef
- 12 lb ground Italian sausage
- 1 medium green pepper, chopped
- 13 cup chopped onion
- 1 (8 ounce) jar pizza sauce
- 28 slices pepperoni (I used more)
- 12 teaspoon dried oregano
- 1 teaspoon chili powder
- 12 teaspoon dried oregano
- 6 pieces mozzarella string cheese
- 6 flour tortillas (10-inch)
- In a large skillet, cook ground beef, sausage, green pepper, and onion over medium heat until ground meat is no longer pink; drain.
- (Can use recipe #31008 All Purpose Ground Meat Mix if desired) Stir in pizza sauce, pepperoni, and oregano.
- Spoon about 1/2 cup meat mixture off-center on each tortilla; top each with a piece of mozzarella string cheese.
- Roll up burrito.
- style, place seam side down on an ungreased baking sheet.
- Bake at 350F for 10 minutes or until heated through and cheese is melted.
- *You may want to top with more pizza sauce!
- To Freeze: Assembly and freeze.
- Be sure to label.
- To Reheat: Thaw overnight and cook as directed.
