Tomato Soup with Fresh Herbs

  1. In large saucepan, heat oil over medium heat.
  2. Add onion, garlic, oregano or basil and thyme and cook, stirring often, until onion begins to soften, about 5 minutes.
  3. Add tomatoes and cook, stirring occasionally, 5 minutes.
  4. Stir in broth, tomato paste and sugar.
  5. Season to taste with salt and freshly ground pepper.
  6. Bring soup to a boil.
  7. Reduce heat; simmer, uncovered, 15 minutes.
  8. Using immersion blender, process until smooth.
  9. Ladle into serving bowls and garnish with fresh herbs.
