Alligator Sausage and Crawfish Casserole
- 1 pound alligator meat sausage, crumbled, browned, drained
- 1 pound crawfish tails
- 1 pound smoked sausage sliced
- 2 cups rice, converted long-grain
- 10 ounces tomatoes, canned with chiles
- 1 can soup, french onion
- 1 can beef stock
- 1 bunch scallions, spring or green onions chopped
- 1 pound mushrooms sliced
- 10 ml garlic minced
- 2 each bay leaves
- 1 tablespoon creole seasoning
- 1 tablespoon black pepper
- 1/4 pound butter or margarine
- Mix alligator sausage with remaining ingredients.
- Place in a covered casserole or pan and cook in preheated 350F (180C) oven for 1 hour.
- After 30 minutes, stir well and continue cooking for the remaining time.
- Let cool, uncovered, for a few minutes and serve.
