Pineapple & Coconut Granola
- 1- 1/2 cup Old Fashioned Oats
- 1 cup Clear Corn Syrup (like Karo)
- 3 Tablespoons Pure Honey
- 1 cup Coconut Flakes
- 6 ounces, weight Dried Pineapple Chunks
- Your Favorite Nuts (optional)
- Preheat oven to 425 degrees F.
- Line a nonstick rimmed baking sheet with parchment paper.
- Lay oats in a single layer and bake for 10 minutes.
- Remove and transfer to a large bowl.
- Add corn syrup, honey, coconut flakes, and pineapple chunks.
- Stir well to incorporate; it will be sticky.
- Place back on lined sheet pan and spread out.
- Bake 10 more minutes.
- Remove and allow to cool.
- Break into pieces and place in an airtight container until ready to serve.
- I always store it in a cool dry location (like a pantry shelf).
- It can also be refrigerated.
- We love this on top of yogurt in the mornings.
