Chocolate Chip Mint Meringues Recipe
- 3 egg whites
- 1 teaspoon vinegar
- 1 c. sugar
- 3 drops green food coloring
- 1 (10 ounce.) pkg. Nestle mint-chocolate morsels
- Line a large baking sheet with a double thickness of waxed paper.
- Set aside.
- Preheat oven to 350 degrees.
- In a large mixing bowl, beat egg whites and vinegar till foamy.
- Add in sugar, 1 Tbsp.
- at a time.
- Beat till stiff peaks from (very stiff).
- Blend in food coloring.
- Mix in mint chips.
- Drop meringue by teaspoonfuls onto waxed paper.
- Place baking sheet in oven, turn off heat.
- Let stand in oven overnight.
- Store in a cold dry place.
- Makes about 5 dozen.
- Great for Christmas or possibly St. Patrick's Day.
