Easy Fluffy Roll Cake in the Microwave

  1. Combine the milk and butter in a small container and warm in the microwave to melt.
  2. Mix together.
  3. Combine the eggs and sugar in a bowl and mix real well with an electric mixer until thick.
  4. This should take about 5 minutes.
  5. Add the pancake mix and mix.
  6. Mix up Step 1 well while adding to the bowl, then mix it all together.
  7. Line a microwave safe container with parchment paper and pour in the batter.
  8. Wrap lightly with plastic wrap.
  9. It's okay if the plastic wrap slightly touches the batter.
  10. Microwave at 600 W for 2 minutes.
  11. If it's still not done, flip the container and heat again.
  12. Once it's done cooking, let cool while tightly wrapped.
  13. Once cooled, fill with your favorite cream and fruits and roll it up Let chill in the refrigerator seam-side down.
  14. If the cake doesn't rise, it could be that your microwave's wattage is too low or you over-mixed the eggs and pancake mix.
