Easy Fluffy Roll Cake in the Microwave
- 2 Eggs
- 60 grams Pancake mix
- 1 tbsp Sugar
- 10 grams Butter (or margarine)
- 2 tbsp Milk
- 100 ml Soy-based heavy cream
- 2 tbsp Condensed milk
- Combine the milk and butter in a small container and warm in the microwave to melt.
- Mix together.
- Combine the eggs and sugar in a bowl and mix real well with an electric mixer until thick.
- This should take about 5 minutes.
- Add the pancake mix and mix.
- Mix up Step 1 well while adding to the bowl, then mix it all together.
- Line a microwave safe container with parchment paper and pour in the batter.
- Wrap lightly with plastic wrap.
- It's okay if the plastic wrap slightly touches the batter.
- Microwave at 600 W for 2 minutes.
- If it's still not done, flip the container and heat again.
- Once it's done cooking, let cool while tightly wrapped.
- Once cooled, fill with your favorite cream and fruits and roll it up Let chill in the refrigerator seam-side down.
- If the cake doesn't rise, it could be that your microwave's wattage is too low or you over-mixed the eggs and pancake mix.
