Stuffed Apples

  1. Preheat oven to 350F.
  2. Cut apples in half.
  3. (don't peel them!)
  4. Hollow out apples halves with a spoon or melon baller, try to leave a 1/2 inch shell.
  5. Reserve half a cup of the pulp.
  6. Arrange apples halves cut side down in a baking dish.
  7. Cover and bake for 10 minutes.
  8. Meanwhile, chop up the extra pulp.
  9. Bring 3/4 cup of water and the butter to a boil.
  10. Stir in the couscous, raisins (if you are using them) pecans, cinnamon, nutmeg and chopped apple.
  11. Remove from heat and let stand, covered, for 5 minutes.
  12. In a small saucepan, combine honey, 2 Tbsp water and cloves.
  13. Bring to a gentle boil for one minute, then set aside.
  14. Fluff up couscous mixture with a fork.
  15. Turn apple halves over and fill with couscous.
  16. Drizzle with half of the honey mixture.
  17. Cover loosely with foil, and return to the oven and bake for 15 more minutes.
  18. Uncover, and drizzle with remaining honey mixture.
  19. Best served warm!
