Buttery Layer Supreme Cake

  1. Set oven to 350 degrees.
  2. Grease a 13" x 9" baking pan.
  3. In a medium bowl, combine the flour, 1-1/2 cups granulated sugar, baking powder and salt; cut in the shortening with a pastry blender or in a food processor, until the mixture resembles coarse meal.
  4. Mix in 3 of the eggs, and the melted butter; mix with a wooden spoon to combine well.
  5. Spread this batter over the bottom of the prepared baking pan.
  6. In another bowl, combine the softened cream cheese, the 2 remaining eggs the confectioners sugar (reserving 2 Tbsp for the topping of the cake) and the vanilla; pour this mixture over the batter in the baking pan.
  7. Bake for 15 minutes; remove from oven, and sprinkle the reserved 2 Tbsp sugar over the top.
  8. Return the cake to the oven, and bake for 35 minutes more.
  9. When done, the cake will still be moist in the center.
  10. Cool slightly before serving.
