Fruited Gelatin and Cottage Cheese

  1. Place cottage cheese in a blender or food processor container; cover.
  2. Blend until smooth; set aside.
  3. Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved.
  4. Add enough ice cubes to cold water to measure 1-1/4 cups.
  5. Add to gelatin; stir until slightly thickened.
  6. Remove any unmelted ice.
  7. Stir in orange segments.
  8. Divide cottage cheese evenly among 8 individual dessert dishes.
  9. Spoon gelatin mixture over cottage cheese.
  10. Refrigerate 2 hours or until firm.
