Mom's Potatoe Salad
- 9 medium russet potatoes
- 7 hard-boiled eggs
- 12 cup chopped sweet onion
- 12 cup chopped celery
- 1 12 cups Miracle Whip
- 12 teaspoon yellow mustard
- 1 pinch salt
- 1 pinch pepper
- peel, half, and then slice potatoes into 1/4 inch slices.
- boil potatoes until you can stick with a fork (soft but not mushy).
- set potatoes aside in refridgerator to get cold.
- boild eggs until hardboiled, cool in refridgerator.
- peel eggs and disguard shells.
- seperate egg whites from yolks and set aside yolks.
- slice or chop whites into roughly 1/4-1/2 inch pieces,.
- set whites aside.
- put yolks into small mixing bowland mash
- add aprox.1/2 cup mirical whip and mustard to yolks and mash and mix.
- add rest of miracle whip and mix thoroughly.
- Add egg/whip mixture to potatoes.
- add all other ingred.
- to potatoes and mix thoroughly with large spoon.
- put mixture into seving dish, cover, and refrigerate overnight.
- refridgerate unused portions.
