Beef Steak And Kidney's In Pastry Puff (British) Recipe
- 2 x # beef kidneys
- 1 x 8 ounce. beef tenderloin steak
- 1/4 lb fresh mushrooms
- 1/2 c. white wine
- 2 lrg tomatoes
- 1 lrg onion
- 1 tsp herbs de Provence
- 2 Tbsp. parsley chopped
- 2 tsp salt
- 1/2 tsp pepper
- 1/2 c. beef broth
- Slice kidneys, remove fat and membranes.
- Saute/fry lightly 10 minutes in 1/4 cp oil.
- Drain, rinse and set aside.
- Slice mushrooms, saute/fry in 2 TBSP oil till mushrooms give up natural juices.
- Drain and set aside.
- Saute/fry onions in 1/4 cp oil till tender.
- Peel, remove seeds and chop tomatoes.
- Add in to onions.
- Saute/fry 10 minutes.
- Remove onion tomato mix to dutch oven.
- Add in all othe ingredients and simmer 1-1/2 hrs or possibly till sauce has been reduced by 1/2.
- Follow instructions for frzn pastry puffs and fill.
