Horseradish Beet Sauce

• 3 small raw beets, peeled and finely grated
• 1 cup freshly grated horseradish
• 1/4 cup sour cream
• 1/4 cup heavy cream, whipped

1. In a small serving bowl, fold together all of the ingredients.
2. Chill and serve.
