Ww Friendly Chicken Fried Rice
- 1 cup of steamfresh brown rice (or other cooked rice)
- 1 teaspoon olive oil
- 12 cup of diced carrot
- 13 cup diced yellow onion
- 13 cup frozen peas
- 13 cup Egg Beaters egg substitute
- 1 pinch ginger
- 1 teaspoon of minced garlic (or to taste)
- pepper
- 3 ounces boneless skinless cooked chicken (I used leftover rotisserie chicken breast)
- 1 teaspoon soy sauce (or to taste)
- cook up the scrambled eggbeater and set aside.
- saute the carrots & onions until tender in a nonstick pan sprayed with cooking spray(about 5 minutes)
- Add 1 tsp of olive oil to the pan & let it heat up a bit.
- add the rice, peas and egg.
- Add the diced/shredded chicken.
- Add soy sauce to taste.
- If you want it spicier, add a little thai chili sauce or red pepper.
