Curried Chicken

  1. Saute chopped onion and celery in margarine in a large shallow pan; saute until onion is soft (about 5 minutes).
  2. Stir in curry and flour, cook 1 minute.
  3. Add tomatoes and green pepper, cook stirring often for 5 minutes.
  4. Stir in parsley, salt, pepper and broth.
  5. Lower heat and simmer covered for 10 minutes.
  6. Add chicken and raisins; heat through and serve over cooked rice.
