Curried Chicken
- 1 whole Medium Onion, Chopped
- 1/2 cups Celery, Chopped
- 1/4 cups Margarine
- 1 Tablespoon Medium Curry Powder
- 2 Tablespoons Flour
- 1 can Diced, Ground, Or Crushed Tomatoes (14 Oz)
- 1 whole Medium Green Pepper, De-seeded And Diced
- 1/4 cups Fresh Parsley
- 1 teaspoon Salt
- 1/4 teaspoons Pepper
- 1- 1/2 cup Chicken Or Vegetable Stock
- 3 cups Cooked Chicken, Diced
- 13 cups Raisins (optional)
- Saute chopped onion and celery in margarine in a large shallow pan; saute until onion is soft (about 5 minutes).
- Stir in curry and flour, cook 1 minute.
- Add tomatoes and green pepper, cook stirring often for 5 minutes.
- Stir in parsley, salt, pepper and broth.
- Lower heat and simmer covered for 10 minutes.
- Add chicken and raisins; heat through and serve over cooked rice.
