Microwave: Twice Baked Sweet Potatoes Recipe

  1. Wash potatoes, pierce each potato several times with a large fork to allow steam to escape.
  2. Place potatoes in microwave at High for 6 to 7 min.
  3. Turn potatoes and rearrange after 3 min.
  4. When done, wrap in foil.
  5. Let stand 5 min.
  6. Cut top off warm baked potatoes.
  7. Scoop out warm potato with a spoon, be careful to keep shells intact.
  8. Set shells aside.
  9. In a mixing bowl, combine warm potato, 1/4 c. ice cream topping, butter, cinnamon and nutmeg.
  10. Beat with electric mixer on High speed till fluffy.
  11. Spoon mix into potato shells.
  12. Place on a serving plate.
  13. Cover with vented plastic wrap.
  14. Microwave at High 3 to 4 min or possibly till heated through.
  15. Top with remaining 2 Tbsp.
  16. topping.
  17. Sprinkle with minced pecans, optional.
  18. Makes 2 servings.
