No Bake Cherry Cheesecake - Sunrise Cherry Pie

  1. Drain pineapple well, reserving two tbsp liquid.
  2. Combine reserved liquid, cream cheese and vanilla, mixing until well blended.
  3. Stir in 1/4 cup (60 ml) pineapple and 1/2 cup (125 ml) pie filling.
  4. Gradually add sugar to cream, beating until soft peaks form.
  5. Fold into cream cheese mixture; pour into crust.
  6. Top with remaining pineapple and pie filling.
  7. Chill until firm.
