Bechamel Sauce (Emeril) Recipe

  1. In a saucepan combine oil and flour, stirring it to a smooth paste.
  2. Cook over low heat, stirring constantly, 4 min, without letting the roux brown.
  3. Gradually add in lowfat milk, whisking constantly, and season to taste with salt, pepper and nutmeg.
  4. Cook for 5 min, stirring constantly.
  5. If sauce has any lumps, strain it before using.
  6. This recipe yields about 4 c. of sauce.
