Chipotle-Onion Chutney
- 2-1/2 qt. red onions, coarsely chopped
- 1/2 cup olive oil
- 1 qt. orange juice
- 1 qt. plum tomatoes, diced Safeway 1 lb For $1.29 thru 02/09
- 2 cups golden raisins
- 1 cup roasted red peppers, diced
- 1 cup roasted yellow peppers, diced Target 1 pkg For $2.99 thru 02/06
- 2 Tbsp. canned chipotle peppers in adobo sauce, diced
- 1 qt. canned mandarin oranges, drained, diced
- 1 cup orange marmalade
- 3-1/3 cups A.1. Thick & Hearty Steak Sauce
- 6 Tbsp. sherry vinegar
- 6 Tbsp. Italian parsley, chopped
- to taste kosher salt
- Cook onions in hot oil in large saute pan 10 to 15 min.
- or until caramelized, stirring occasionally.
- Stir in orange juice, tomatoes and raisins; cook 10 min.
- or until mixture is reduced by one-third.
- Add all remaining ingredients except vinegar, parsley and salt; mix well.
- Reduce heat to low; simmer 10 to 15 min.
- or until thickened.
- Remove from heat.
- Stir in remaining ingredients.
- Serve warm.
