Cranberry Pistachio Granola Bites

  1. Note that the dough requires at least 1 hour of inactive refrigeration time.
  2. In a large bowl, combine oats, dried cranberries, pistachios, hazelnuts, honey and chia seeds.
  3. Refrigerate about 12 hours, or until mixture is firm.
  4. Using a small spoon or scoop, roll into balls.
  5. Enjoy!

  7. If you find the mixture too dry, add a bit more honey to keep the bites sticking together.

  9. The granola bites keep best in the refrigerator in an airtight container for up to two weeks.
