Peanut Chutney with Sesame Seeds

  1. Put the peanut butter, 1 tablespoon water, yogurt, lemon juice, shallots, cilantro, cayenne, and salt in a small bowl and mix until smooth.
  2. Taste for balance of seasonings.
  3. Put the oil in a small, heavy frying pan and set on medium heat.
  4. When hot, put in the sesame seeds.
  5. Shake until the sesame seeds either brown slightly or begin to pop.
  6. Lift up the pan and add the sesame seeds and oil to the chutney.
  7. Stir to mix.
