Beef Pot Pie With Cornmeal Cheese Crust Recipe
- 1 lb Chuck steak, cut in pcs
- 1 Tbsp. Oil
- 1 x Bell pepper, minced
- 1 med Onion, minced
- 1 can (7.5-ounce) tomatoes, undrained
- 1/4 c. Tomato paste
- 1 x -(up to)
- 2 x Jalapenos, minced
- 1 Tbsp. Chili pwdr
- 1 tsp Sugar
- 2 c. Cool water
- 1/4 tsp Salt
- 1 x Recipe cornmeal crust (see recipe)
- 1/2 c. Shredded cheese
- Brown beef in oil.
- Cook pepper and onion in drippings till tender.
- Add in beef, tomatoes, paste, pepper, chili pwdr, sugar, water and salt (NOTE: This may be too much water, start with much less and add in more if necessary-the recipe wasn't clear!).
- Bring to a boil, reduce heat and simmer 1 hour till beef is tender.
- Spoon into a 10x6x2-inch baking dish.
- Cover with crust.
- Cut slits in top.
- Bake, uncovered, at 425 degrees for 20 min.
- Sprinkle with cheese and let stand 5 min before serving.
