Tuscan Skillet Baked Chicken Thighs
- 8 whole Chicken Thighs
- Salt And Black Pepper To Taste
- 4 whole Sun-Dried Tomatoes, Chopped
- 1 whole Bell Pepper, Chopped
- 1 whole Yellow Onion, Chopped
- 2 Tablespoons Capers
- 1/4 cups Sliced Black Olives
- 1 Tablespoon Italian Seasoning Mix
- 1- 1/4 cup Low Sodium Chicken Stock
- 2 cups Grated Pecorino Cheese
- Preheat oven to 400 degrees F.
- In a 10-inch skillet (I use cast iron), add all ingredients, sprinkling the grated cheese on top of everything.
- Cover with foil and place in the oven on the middle rack.
- Bake for 40 minutes, then remove foil and bake another 5 minutes to crisp up the cheese.
- Serve over pasta or rice.
