Mexican Pork Roast Recipe

  1. If using dry chilies, boil in water and let stand till soft; drain.
  2. Remove stem, seeds and veins; then process with garlic, oregano and 4 ounces of Coke in food processor.
  3. Salt and pepper roast.
  4. Make slits in various places and insert garlic cloves.
  5. Brown roast on all sides in oil; place roast in baking pan.
  6. Spread chili mix over meat and pour on remaining Coke.
  7. Bake at 350 degrees for 2 1/2 hrs.
  8. Let meat stand 15 min before serving.
  9. Serves 12.
