Mom T's Chicken Kiev
- 8 boneless skinless chicken breast halves
- 18 teaspoon salt
- 1 tablespoon green onion, chopped
- 1 tablespoon parsley, chopped
- 14 lb butter, chilled and cut into 8 finger length sticks
- 14 cup flour
- 1 egg, beaten
- 1 tablespoon water
- 12 cup fine breadcrumbs
- Place chicken breasts between 2 sheets of clear plastic wrap and pound to flatten to 1/4" thick.
- Remove plastic.
- Sprinkle each brast with salt and place green onion and parsley on it.
- Place butter piece at end of each chicken breast and roll jell-roll style, pressing ends to seal.
- Secure with a toothpick.
- Beat egg and water.
- Dip breasts in flour, then egg and water mix, then bread crumbs.
- Chill 1 hour.
- Deep fry 5-10 minutes until brown.
