Mom T's Chicken Kiev

  1. Place chicken breasts between 2 sheets of clear plastic wrap and pound to flatten to 1/4" thick.
  2. Remove plastic.
  3. Sprinkle each brast with salt and place green onion and parsley on it.
  4. Place butter piece at end of each chicken breast and roll jell-roll style, pressing ends to seal.
  5. Secure with a toothpick.
  6. Beat egg and water.
  7. Dip breasts in flour, then egg and water mix, then bread crumbs.
  8. Chill 1 hour.
  9. Deep fry 5-10 minutes until brown.
