Baked Egg Casserole

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt butter in a saucepan over medium heat.
  3. Stir in flour until smooth.
  4. Gradually whisk in evaporated milk and water.
  5. Season with salt, white pepper and cayenne pepper.
  6. Cook, stirring frequently, until thickened.
  7. Arrange sliced eggs in a medium baking dish.
  8. Pour sauce over eggs.
  9. Place cheese slices on top.
  10. Bake in preheated oven for 15 to 20 minutes.
  11. Place toast on plates, and spoon egg mixture over.
