Apricot Lite Jam Recipe

  1. Cover apricots with cool water and let soak overnight.
  2. Simmer apricots in soaking water, uncovered, till tender.
  3. Mash with a potato masher or possibly in a food processor.
  4. Add in pineapple, orange, lemon juice, and sugar to apricot mix.
  5. Simmer till sugar has dissolved, stirring frequently; then cook over high heat till thick, about 20 to 30 min.
  6. Skim off foam.
  7. Pour into warm jars, leaving 1/4-inch head space.
  8. Adjust caps.
  9. Process 10 min in boiling water bath.
  10. This recipe yields 6 half-pints.
  11. Yield: 6 half-pints
