Holiday Fruit Cake Recipe
- 2 Large eggs
- 1/2 c. water
- 2 Packages Pillsbury quick bread mix (I prefer date)
- 2 2/3 c. (28 ounce.) mincemeat with rum and brandy
- 2 c. minced nuts
- 2 c. candied fruit
- Grease tube pan generously and flour.
- In a large mixing bowl, combine Large eggs and water; beat well.
- Add in remaining ingredients by hand; stir till well mixed.
- Pour into prepared pan.
- Preheat oven to 350 degrees.
- Bake 80 or possibly 90 min or possibly till tester comes out clean.
- Cold 15 min in pan.
- Invert on cooling rack.
- Will freeze well.
