Shrimps in Green Sauce
- 2 leeks, white part only, finely julienned
- 1 Tbsp. butter
- 1 pkg. (250 g) Philadelphia Brick Cream Cheese, cubed
- 1/2 cup milk
- 1/4 cup white wine
- 2 tsp. Dijon mustard
- 1 pkg. (10 oz/284 g) fresh spinach, washed & coarsley chopped
- 1/2 lb. (250 g) cooked, peeled large shrimp, thawed & drained Safeway 1 lb For $8.99 thru 02/09
- SAUTE leeks in butter in large frypan on medium heat until tender.
- Add cream cheese, milk, wine & mustard; stir until smooth.
- ADD spinach to sauce mixture; cover & cook 2 minutes.
- Stir in shrimp & cook just until heated through.
- Serve over rice.
