Roasted Tomato Goat Cheese Garlic Spread
- 1/2 cups Olive Oil
- 1 head Garlic, Peeled And Separated Into Cloves
- 2 pints Cherry Tomatoes
- 10 ounces, weight Goat Cheese (plain Or Herbed)
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/4 cups Parsley Or Basil, Chopped
- Preheat oven to 375 degrees F.
- Into a baking dish, add tomatoes and garlic and drizzle with the oil.
- Bake uncovered for 30-40 minutes, until garlic is soft and tomatoes have blistered.
- Remove the dish from the oven.
- Nestle the goat cheese log in the center of the baking dish and scoop the olive oil, tomato, garlic mixture over the goat cheese.
- Add salt, pepper and herbs.
- Bake another 5-10 minutes.
- Serve with crusty bread or toast points.
