Maple Bean Stuffed Acorn Squash
- 1 tablespoon butter
- 1 small onion, chopped
- 1 tablespoon fresh rosemary, chopped
- 14 cup dried cranberries
- 1 (398 ml) canmaple style beans
- 12 teaspoon orange zest, grated
- 2 medium squash (acorn or pepper, about 1 lb. each)
- 14 teaspoon fresh ground pepper
- Preheat the oven to 350F.
- Melt the butter in a nonstick skillet over medium heat.
- Add the onion and cook until golden brown,.
- Stir in the rosemary and cranberries, and cook for 2 minutes.
- Stir in the baked beans and orange zest.
- Cut the squash in half lengthwise and discard the seeds.
- Par-cook the squash in the microwave on high for 46 minutes.
- Sprinkle between the squash and set on a rimmed baking sheet,.
