Beet Jelly With Lemon

  1. Cook beets in water until tender.
  2. Drain and reserve juice.
  3. Combine reserved juice, drink powder and pectin in large pot.
  4. Stir and bring to a boil over medium-high heat.
  5. Boil 6 minutes without stirring.
  6. Stir in sugar and salt.
  7. Return to a boil.
  8. Boil rapidly on high for 1 minute.
  9. Skim of foam.
  10. Pour into hot sterlized jars to within 1/4 inch of top.
  11. Place sterlized metal lids on jars and screw metal bands on securely.
  12. For added assurance against spoilage you may choose to process in a boiling water bath for 5 minutes.
