Curried Spinach Salad
- 12 ounces spinach 1 bag
- 6 each scallions, spring or green onions sliced
- 6 each sweet bell peppers mini-peppers (red, yellow, orange, sliced
- 1 each apples crisp apple, cut in slices then chunky pieces
- 13 cup golden raisins plumped in hot water, optional
- 13 cup peanuts or more, coarsely chopped
- 1/2 package - wonton salad topping
- 13 cup white vinegar
- 23 cup vegetable oil
- 13 cup chutney major grey's or other chutney, chopping large pieces
- 2 teaspoons sugar
- 1 teaspoon curry powder or more
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 3 drops red hot pepper sauce or more
- Put all ingredients for dressing in a jar with a lid.
- Shake and taste, adjusting the ingredients according to your preference.
- Set aside.
- This is best done at least an hour before serving to "marry" the flavors.
- Add all remaining ingredients, except the Wonton Strips, to a large salad bowl.
- Add dressing a little at a time, so as not to drench the salad.
- When serving, add the Wonton strips to the top of the salad.
