Salmon Stuffed Cherry Tomatoes
- 40 whole Cherry Tomatoes (or Even More)
- 7- 1/2 ounces, weight Salmon (canned)
- 4 ounces, weight Cream Cheese, Softened
- 2 Tablespoons Onion, grated
- Salt And Pepper
- 2 Tablespoons Freshly Squeezed Lemon Juice
- 1 Tablespoon Half-and-Half, To Moisten
- Cut tomatoes in half lengthwise.
- Remove pulp and invert on paper towels to drain.
- Combine all other ingredients to until you have a creamy consistency.
- Stuff tomatoes with the creamy mixture using a small spoon.
- Garnish with parsley and chill before serving.
