Salmon Stuffed Cherry Tomatoes

  1. Cut tomatoes in half lengthwise.
  2. Remove pulp and invert on paper towels to drain.
  3. Combine all other ingredients to until you have a creamy consistency.
  4. Stuff tomatoes with the creamy mixture using a small spoon.
  5. Garnish with parsley and chill before serving.
