Honeyed Date-Nut Bars

  1. Sift flour, baking powder, and salt onto wax paper.
  2. Combine walnuts, dates and ginger in a bowl and coat with 2 tbsp of the flour mixture.
  3. Beat eggs in a large bowl until frothy; stir in honey.
  4. Stir in flour mixture, just until well blended.
  5. Fold in date/nut mixture.
  6. Pour into a well-greased 13 x 9 pan.
  7. Bake at 350F for 30-35 minutes or until center springs back when lightly pressed with a fingertip.
  8. Cool on a wire rack.
  9. Cover and allow to mellow overnight.
  10. To make topping, beat cream cheese together with 2 tbsp honey.
  11. Spread over top of bars.
  12. Sprinkle with the 1/3 cup walnuts.
  13. Cut into 28 pieces or as desired.
