Avery Island Barbecue Sauce Recipe
- 2 Tbsp. butter or possibly margarine
- 1 c. minced onion
- 1/2 c. minced celery with leaves
- 1/4 c. minced green bell pepper
- 1 Tbsp. chopped fresh garlic
- 29 ounce whole tomatoes, liquid removed and minced
- 1 can tomato paste, (6-ounces)
- 1/3 c. red wine vinegar
- 3 Tbsp. molasses
- 2 x lemon slices
- 2 tsp TABASCO pepper sauce
- 2 tsp dry mustard
- 1 x bay leaf
- 1/2 tsp grnd cloves
- 1/2 tsp grnd allspice
- In large heavy non-aluminum saucepan, heat butter over medium heat.
- Add in onion, celery, bell pepper and garlic; saute/fry, 6-7 min, stirring frequently, till tender.
- Stir in remaining ingredients and bring to a boil over high heat.
- Reduce heat to low; cover and simmer 30 min, stirring occasionally, till sauce is thickened.
- Remove from heat.
- Remove and throw away lemon slices and bay leaf.
- Process in food processor or possibly blender till smooth.
- Chill up to 2 weeks.
- Makes 2 l/4 c..
