Avery Island Barbecue Sauce Recipe

  1. In large heavy non-aluminum saucepan, heat butter over medium heat.
  2. Add in onion, celery, bell pepper and garlic; saute/fry, 6-7 min, stirring frequently, till tender.
  3. Stir in remaining ingredients and bring to a boil over high heat.
  4. Reduce heat to low; cover and simmer 30 min, stirring occasionally, till sauce is thickened.
  5. Remove from heat.
  6. Remove and throw away lemon slices and bay leaf.
  7. Process in food processor or possibly blender till smooth.
  8. Chill up to 2 weeks.
  9. Makes 2 l/4 c..
