Borracho Chicken ( Drunken / Beer Can Chicken )

  1. Season the chicken inside and out with salt and pepper.
  2. Fill the can of beer with finely chopped onion and garlic and a generous amount of jalapeno juice.
  3. Put the beer can inside the chicken's cavity and prop the chicken on the grill.
  4. Cook over indirect heat for about 1 to 1 1/2 hours with the grill lid closed.
