Red Letter Torte
- 1-1/3 cups flour
- 1-1/2 tsp. baking powder
- 1/2 cup cholesterol-free egg product
- 3 Tbsp. fat-free milk
- 1/4 tsp. almond extract
- 1/4 cup margarine or butter, softened
- 1/2 cup sugar
- 1 can (21 oz.) light cherry pie filling
- Mix flour and baking powder; set aside.
- Blend egg substitute, milk and almond extract; set aside.
- Beat margarine or butter and sugar in small bowl with electric mixer at medium speed until creamy.
- Alternately add flour mixture and egg mixture, blending well after each addition.
- Spread batter in greased 9-inch springform pan.
- Bake at 350F for 40 minutes.
- Spoon cherry pie filling over batter; sprinkle Streusel Topping over filling around outside edge of pan.
- Bake 10 to 15 minutes more or until toothpick inserted in center comes out clean.
- Cool in pan on wire rack for 25 minutes.
- Remove outside ring of pan; cool completely on wire rack.
- Drizzle with powdered sugar glaze, if desired.
