Eliopsomakia - Olive Muffins
- 1 cup black olives, pitted and chopped
- 2 cups flour
- 1 small onion, grated
- 34 cup olive oil
- 34 cup water
- 1 12 tablespoons of fresh mint, minced
- 1 tablespoon sugar
- 1 tablespoon baking powder
- Combine all ingredients; mix well.
- Bake in greased, floured muffin tins at 350 F for 40-45 minutes.
