Saute salad
- 2 red onions, chopped
- 2 Bell peppers, sliced
- 1 bag baby spinach
- 1 carton whole button mushrooms
- 1 olive oil, extra virgin
- Saute chopped onion and sliced bell peppers in olive oil until browned and spinach until thoroughly wilted.
- These items cook fully at different rates, so cook them individually.
- Place sauteed veggies in a medium mixing bowl.
- Slice raw button mushrooms into bowl and mix well.
- Add salt to taste.
- Serve warm over rice or alone.
