Low Calorie Sweet Potato and Ginger
- 1 yam
- 2 apples
- 1 tablespoon brown sugar
- 12 teaspoon ground ginger
- 1 pinch salt
- Dice the yams in 1/2 inch cubes and place in boiling water for five minutes or until softened, but still holding their shape.
- Dice the apples, leaving the peel on, in pieces the same size of a little larger.
- Add them to the yams, adn cook three minutes longer until yams are soft and so are the apples, but the apples are not yet mushy.
- Drain the water.
- Mix the brown sugar adn the ginger powder together and sprinkle it over the yams and apples.
- Combine until well mixed.
- Keep warm until served.
