Apple Cocoroon Pudding Recipe
- 3 x -(up to)
- 4 x Tart apples
- 1 tsp Cinnamon
- 1/4 c. Sugar
- 1 x Egg
- 1 tsp Vanilla
- 1/2 c. Bisquick
- 1 Tbsp. Margarine
- 1/2 c. Shredded coconut
- 1/2 c. Sugar
- Preheat oven to 350.
- Slice peeled apples into a shallow 8 inch baking dish.
- Sprinkle with the 1/4 c. sugar and cinnamon combined.
- Place in warm oven.
- Meanwhile beat egg, add in sugar, then vanilla.
- Stir in Bisquick, then melted marg and coconut.
- Spread over warm apples and bake 25-30 min till apples are tender and topping is nicely browned.
- I double this recipe.
- It's also good with fresh peaches.
