My Great Grandmother's Peanut Butter Cookies
- 2 cups shortening (Crisco is best)
- 2 cups granulated sugar
- 2 cups packed brown sugar
- 4 large eggs
- 2 cups peanut butter
- 4 teaspoons baking soda
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 6 cups all-purpose flour
- Preheat oven to 375.
- (My oven runs a bit hot, so I put mine at 350.

- Cream white sugar, brown sugar and crisco until fluffy.
- Add eggs and beat well.
- 'Beat in peanut butter, baking soda, vanilla and salt.
- You'll have to stir in about 1/2 to 3/4 of the flour.
- do not use a mixer.This makes an extremely stiff dough you might have to mix in the remaining flour by hand.
- Shape dough into little 1- 1 1/2 inch diameter balls.
- Place on ungreased cookie sheet.
- Use a fork and press down on the top of the balls to make a depression.
- Bake for 7-9 minutes or until edges are browned.
- Wait a few seconds before transferring cookies to cooling rack or newspaper.
