Tabbouleh (Lebanese Salad) Recipe
- 1 c. bulgur wheat
- 2 c. water
- 1/2 c. extra virgin olive oil
- 1 bunch green onions
- 1/2 c. lemon juice
- 1 1/2 c. fresh parsley
- 1/2 c. mint leaves
- 1 teaspoon salt
- 1 sliced tomato or possibly 1/2 c. salsa
- Soak bulgur in water till soft; 2 to 3 hrs.
- Wash parsley and mint and chop fine.
- Cut onions into small pcs.
- Drain bulgur and combine with parsley, mint and onion.
- Stir in extra virgin olive oil, lemon juice and salt.
- The tomato may be minced and stirred in or possibly sliced on top.
- If using salsa, fold in thoroughly.
- Serves 6 to 8.
