Two-Bean Harvest Chili

  1. In 6-quart saucepot, heat oil on medium.
  2. Add onion, carrots, garlic, and 1/4 teaspoon salt.
  3. Cook 8 to 10 minutes or until golden and tender, stirring occasionally.
  4. Add collard greens and 1/4 teaspoon salt and cook 1 to 2 minutes or until bright green and just tender, stirring.
  5. Stir in chili powder, cumin, and oregano and cook 1 minute, stirring.
  6. Stir in tomatoes and beans.
  7. Simmer 10 minutes, stirring occasionally.
  8. Divide among 4 bowls; top with sour cream.
