Zesty Salsa Rice
- 1/4 cup KRAFT Zesty Italian Dressing
- 2 cups long-grain white rice, uncooked
- 1 large carrot, shredded Target 2 lb For $3.00 thru 02/06
- 1 cup frozen peas
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups fat-free reduced-sodium chicken broth
- 1-1/2 cups TACO BELL Verde Salsa
- Heat dressing in large skillet on medium heat.
- Add rice; cook and stir 2 to 3 min.
- or until rice is lightly browned.
- Add next 4 ingredients; cook 5 min.
- or until onion is tender, stirring frequently.
- Stir in broth and salsa.
- Bring to boil; cover.
- Simmer on medium-low heat 30 min.
- or until rice is tender, stirring occasionally.
