Meatballs in Fried Tomato Sauce
- 400 grams minced beef
- 1 egg
- 1 tbsp chopped parsley
- 30 grams breadcrumbs
- 1 pinch salt
- 100 grams onion, chopped
- 400 grams ripe tomatoes peeled
- 6 tbsp olive oil
- 1 garlic clove
- 1/2 chilli
- 1 pinch chopped parsley
- 1 bay leaf
- 1 tsp oregano
- 1 pinch salt to taste if required
- Make the meatballs with the minced beef adding the egg and parsley.
- Roll them in breadcrumbs and brown them in a bit of hot oil.
- Keep until needed.
- Scald and peel the tomatoes
- Sautee onion until soft with garlic and a bit of chilli pepper in a bit of olive oil.
- Add the tomatoes and cook for 15-20 minutes.
- Add parsley and seasoning
- Once cooked mash to make the sauce smoother.
- It can be blended if preferred
- Add the meatballs and cook together for 2 - 3 minutes
- Serve with some nice bread
